Pollo a la brasa is traditional Peruvian rotisserie chicken known for its seasoned, juicy meat, crisp skin, and smoky charcoal flavor. It is the dish that inspired The Flippin Chicken.

Our signature pollo a la brasa is marinated for more than 24 hours, then slowly cooked over natural charcoal in a custom rotisserie oven to develop its smoky flavor.

The Flippin Chicken grew out of The Freakin Incan and a desire to explore pollo a la brasa in a concept built around the iconic Peruvian dish. The idea took shape during the COVID lockdown as the team experimented with marinades, charcoal, and rotisserie cooking.
